Easy Green Bean Salad

Adapted from Beachgreens

Serves: 4

Preparation Time: 25 minutes 

 

1 pound green beans, cleaned and cut into 1-inch pieces (Blue Lake or Romano both work)

Salt

1/3 cup crumbled feta cheese

2 small tomatoes, chopped  

2 scallions, chopped (optional)  

A few springs of parsley and/or mint, chopped (Optional)  

Olive oil, to taste 

Salt and Pepper to taste 

 

Bring a pot of water to a boil, add a liberal amount of salt.  Add green beans, and cook for about 5 minutes.  Drain, and let cool.  Add remaining ingredients, and combine gently.  Enjoy at room temperature.
